Thank god for Banana Bread. Seriously... What better way to use up old, ripe, black bananas than mashing them into bread batter, right? The best part though is that you can combine almost anything with banana! This morning I decided to throw in some almonds, mix in some melted chocolate, sprinkle in some bourbon and cinnamon... Do whatever you want and you'll always land yourself an amazing breakfast treat called Banana Bread!




Ingredients


(makes one loafpan)

  • 3 to 4 ripe bananas, smashed
  • 1/3 cup melted butter
  • 1/2 cup brown sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 tablespoon bourbon
  • 2 teaspoons baking powder
  • Pinch of salt
  • 1 teaspoon cinnamon
  • 1 1/2 cup of flour
  • 4 tablespoons ground almonds
  • 4 tablespoons almond splits
  • 1/2 cup melted chocolate (about 100g), I used dark chocolate
  • 2 tablespoons buttermilk
Preparation

Preheat oven to 180°C. In a small saucepan bring water to a boil. Once the water boils take the saucepan away from the heat. Place a small bowl over the saucepan, not touching the water and chop in the chocolate. Allow to melt.
Preheat the oven to 180°C. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, vanilla and bourbon, then the cinnamon. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour, mix. Add the almonds, and stir until just incorporated. Last but not least, add the melted chocolate, cooled down to room temp. and the buttermilk. Mix for one last time. Pour mixture into a buttered loaf pan. Bake for 50 minutes. Cool on a wire rack and you're done!
Slice some pieces, wrap them in clingwrap and freeze them for those mornings when you just don't have time to make something from scratch! I always freeze some individual portions in my freezer... Perfect for when I'm in a rush!
